An enjoyable short story on this very topic by Elizabeth Moon, one of my favorite fantasy writers (the Paksenarrion books etc; she also writes science fiction by-the-by), with a delicious twist at the end that I'd rather not spoil. Originally written for a magazine but I have it in one of her short story collections.
