DS2 Quest Icons?

Just wondering, when adding an icon that goes above a character's head, what do you do to add/change that? I don't know why I never figured out how to do this myself earlier but it doesn't look like I can just change it with the conversations.gas file.
Can anyone tell me how I could go about doing this?
